Study and Exploitation of Olive Oil as Innovative Raw Material For Special Industrial Application to Baby Food Products
Breastfeeding is the normal way of providing young infants with the nutrients they need for healthy growth and development according to the World Health Organization. Infants that for any reason do not have access to mother’s milk may consume formulas produced under current EU regulations. The lipid content of diet at the very first stages of life is crucial for the development of infants since it provides them with energy and other nutrients. Until now, formula manufacturers worldwide elaborate in their recipes plant oils that are produced in tropical areas or in Northern European countries such as palm oil, coconut oil and rapeseed oil.
Olive oil seems superior to other plant oils, when compared regarding their composition in fatty acids, for infant nutrition. This fact give olive oil additive value in terms of its elaboration as a raw material for baby food products.
Project ELAION aims at elaborating in a pilot scale and for the first time olive oil in products for infant nutrition.
